  • Salt, to taste
  • 0.5 tsp black pepper powder

  • 1 tsp hathi kashmiri chilli powder

How to Make Veg Fried Rice

Step 1: Prepare the rice

If you have leftover rice from the day before, simply stir it with a fork and set it aside. If you’re cooking fresh rice, boil it with a little oil and salt; don’t overcook it. Spread the cooked rice and let it cool completely. Properly cooling the rice saves your fried rice from turning into a sticky lump.

Step 2: Chop vegetables before you start

Fried rice cooks too fast, so pre-chop the vegetables, garlic, and ginger earlier and place them ready next to the stove. You won’t get the time to chop vegetables once the pan is hot.

Step 3: Sauté the garlic and ginger

Heat 3 tbsps of oil in a heavy kadhai on high flame. Add the finely chopped garlic and ginger. Sauté them for about 20-30 seconds until they release their aroma. Keep the flame high throughout the whole recipe; that's the main secret to making the street-style fried rice.

Step 4: Add the chopped vegetables

Don’t use the garlic, ginger, and spring onion. Instead,, they use a little pinch of good-quality asafoetida (hing) in the hot oil at the beginning, then let it crackle for about 5-10 seconds before adding the vegetables. Continue with the rest of the recipe.

Egg Fried Rice

After stir-frying and tossing the vegetables in Step 4, collect them to one side of the pan and pour 2 beaten eggs into the empty pan. Crumble them lightly, then mix them with the vegetables before adding the spices and rice.

Paneer Fried Rice

Add 0.5 cup of small, fried paneer cubes along with the vegetables of your choice in Step 4. Stir-fry everything for a couple of minutes so the paneer gets the smoky flavour, then cook your dish following the rest of the steps.

Schezwan Fried Rice
