    Star anise is a dried, star-shaped spice that is one of the most powerful whole spices in the Indian kitchen. It is also known as chakra phool in major Indian families and badiyan across Gujarati families. Each pod has 8 arms, each with a seed. The bold, sweet, licorice-like smell of it comes from an active compound called anethole. It’s the same compound that gives fennel seeds their sweetness, but stronger and more concentrated.

    Used whole pods in biryanis, dal, and slow-cooked curries, and ground in garam masala and Chinese five-spice along with other spice powders. It is one of the few spices that connects Indian and East Asian cuisine traditions equally well.

    Star anise is a comparatively fragile spice. The 8-arm structure could break easily during transport and rough handling. The pods with broken arms are exposed seeds; they lose aroma faster, and give an inconsistent cooking. Hathi Masala cleans star anise through a 9-step machine-cleaning process using equipment designed for fragile whole spices. Broken pods, dust, and small impurities are sorted and removed before packing.

    How to Use Star Anise in Your Kitchen

    Traditional Biryani: Add 1–2 badiyan pods to hot oil or ghee, along with other whole spices, before adding the onion. Let the pods crackle for 15–20 seconds. The pods give the entire biriyani dish a warm base note.

    Garam Masala: The Badiyan is one of the essential components in different garam masala mixes. Dry-roast the whole badiyan pods first, and crush them lightly into a fine powder. Mix the powders with other whole spices, such as cardamom, cinnamon, cloves, and black pepper powder.

    Slow-Cooked Curries: Add 1 badiyan pod to the oil at the start of cooking. Remove it before serving the dish, like other whole spices. It is added to the dish for flavor and shouldn’t be eaten whole.
