It’s a premixed masala blend created specifically for cooking vegetables. Instead of adding different spices, such as coriander, cumin, turmeric, and chili, separately, you can add 1 spoon of sabji-masala to get a similar balanced taste. The secret of a good sabji-masala is the proportion; too much of any single spice turns the blend one-dimensional. This blend from Hathi Masala is built around how most Indian families actually cook.
