What Is Sabji Masala?
It’s a premixed masala blend created specifically for cooking vegetables. Instead of adding different spices, such as coriander, cumin, turmeric, and chili, separately, you can add 1 spoon of sabji-masala to get a similar balanced taste. The secret of a good sabji-masala is the proportion; too much of any single spice turns the blend one-dimensional. This blend from Hathi Masala is built around how most Indian families actually cook. It has moderate spice, good color, and a full, rounded aroma that doesn’t overpower the dish itself.
Ingredients and Sourcing
This masala mix contains: Coriander, Red Chilli, Turmeric, Bay Leaves, Salt, Cumin, Ginger, Nutmeg, Fenugreek Leaves, Black Cardamom, Clove, Green Cardamom, Carom Seeds, Long Pepper, and Black Pepper.
Each spice is sourced from its best and primary growing regions across India. Coriander seeds from Rajasthan, cumin seeds come from Gujarat, red chilli sourced from Andhra Pradesh and Karnataka, and other whole spices from Kerala and the northeast India.
Why Cryogenic Grinding Matters for Sabji Masala
A masala mix similar to sabji-masala contains multiple individual spices. Each spice brings its own volatile oils. In traditional grinding, heat is generated by friction. This heat evaporates the oils, and the masala mix smells a little flat. Hathi Masala ground spices are produced using cryogenic technology, which cools the spices to –180°C with liquid nitrogen before grinding. At this temperature, the essential oils in each spice are locked into every particle, giving you a more aromatic and flavourful masala.
How to Use Sabji Masala
Dry Sabji: Add 1 teaspoon of this masala per 250g of vegetable after the tadka. Mix well, then cook for 2 minutes before adding water. This helps the masala cook properly and removes any raw spice smell.
Mixed Veg Curry: Use 1.5 tsps per 400g of mixed vegetables. Mix it with the onion-tomato masala base, then cook the mixture until the oil starts to separate. This is how this masala contributes to the gravy.
Paneer Bhurji or Egg Bhurji: Go with 0.5 teaspoon along with the onion and green chili base. This masala pairs well with these dishes because its spice balance is designed for soft textures.
Stuffed Paratha Filling: Mix a pinch of this masala into the aloo or paneer filling. A little amount gives enough flavor when the masala has a proper fragrance.
