    It is a special masala mix created only for chole (kabuli chana). This mix is different from regular garam masala. It contains dried pomegranate seeds, amchur (dried mango powder), and dried ginger powder. These 3 spices add a mild sourness and a dark colour to your chole. Hathi Chana Masala is made the same way Punjabi homes have been cooking chole for ages.

    Why Cryogenic Grinding Matters for Chole Masala

    It is made using many soft spices, such as pomegranate, amchur, cardamom, and clove. These spices contain natural essential oils that give the spices their fragrance. Traditional grinding generates heat due to friction. This heat evaporates the natural oil. Hathi Masala uses cryogenic technology to grind the spices.     Punjabi Chole: Use 1.5 tsp for 250g of soaked chickpeas. Mix the masala into the onion-tomato gravy after the tomatoes have softened.

    Chole Bhature: Add 2 tsp with 250g chickpeas. The extra masala gives a strong flavour that pairs beautifully with the soft bhatura.

    Pindi Chole (dry): 1 tsp masala works well with a pinch of dry ginger powder. This chana is dry, so do not use too much masala.

    Chana Chaat: Add a small pinch of masala mix to boiled chana along with lemon juice, onion, and green chilli.

    Chole Tikki: Add 0.5 tsp of masala mix to the chole gravy, then pour it over the aloo tikki. The tangy flavours from amchur cut the richness of the tikki.

    Mixed Bean Curry: Add 1 tsp while cooking. It gives a Punjabi-style taste to mixed bean dishes.
