For topping:

  • Mozzarella cheese

Step-By-Step Cheese Corn Cups Recipe

Step 1: Preheat the oven

A properly heated oven gives your bread cups that signature and beautiful crunch. Preheat the oven to 180°C. Let it heat for about 10-15 minutes before placing the bread cups in it.

Step 2: Prepare the bread cups

Flatten each bread slice using a rolling pin. Press them hard until they are reduced to half their original thickness. This step is important as it makes your bread easy to shape and press into the muffin tray without tearing or cracking.

Cut the brown edges of these bread slices if you want a roughly square or round shape that fits your muffin tray properly. Grease the muffin tray lightly with butter or oil. Press every prepared bread slice gently into the tray. Give them a cup shape with the edges slightly up.

Brush every bread cup lightly with butter on the inside and edges.

Pro Tip: Don't skip rolling the bread step. Bread that hasn't been flattened will crack when you shape it into the muffin tray, and the cups won't hold their shape perfectly while baking.

Step 3: Make the corn filling

Take a mixing bowl and combine the boiled corn kernels, along with chopped capsicum, chilli flakes, oregano mix, black pepper powder, and salt. Add some grated processed cheese, a pinch of mozzarella, and fresh coriander. At last, sprinkle some aakhri masala on top and mix everything together properly until the filling is uniformly combined. Taste the mixture and adjust the salt or spices to your taste.

Step 4: Fill the cups

Take a spoon of the corn mixture and fill each bread cup, applying light pressure. Fill the cups right to the top. Add a tiny amount of mozzarella cheese on the top of every cup. It melts into a golden, bubbly topping that tastes good and looks beautiful.

Step 5: Bake these cups until golden

Set this prepared muffin tray in the preheated oven and bake for about 12-15 minutes, until the bread turns golden and crisp on the sides and the mozzarella sprinkled on top is fully melted, bubbly, and lightly golden in spots.

Important: Baking time can vary slightly depending on the oven. Check it at 12 minutes. The cups are cooked when the sides of the bread look golden and crispy. If the cheese is melted but the bread is still looking pale and soft, switch to the grill setting and cook for 1-2 more minutes.

Step 6: Garnish and serve immediately

Remove the tray from the oven. Let the cups rest and cool for 1-2 minutes. They harden a little once they cool, and you can easily remove them from the tray. At last, garnish these corn cups with some freshly chopped coriander leaves and serve them immediately while they’re still hot and crispy.

Variations

Tawa / Air Fryer Variant

Tawa: Press and shape the bread slice on the muffin tray. Then gently transfer them to a greased flat pan, cover, and cook the corn cups over the lowest heat for about 10-12 minutes.

Air fryer: Place the stuffed cups in the air fryer and bake for 8-10 minutes at 180 °C. The cups turn crispy quickly in the air fryer, and the cheese melts properly.

Schezwan Corn Cups

Use Schezwan sauce in place of aakhri masala, then mix it into the corn filling. Skip the oregano mix. This variant offers a spicy, tangy Indo-Chinese-style dish. This variant is popular among teenagers.

Extra Veggie Corn Cups

Chopped vegetables such as onions, carrots, cabbage, capsicum, and peas, along with a few drops of hot sauce, can be added to your filling. Some finely chopped spinach or jalapeños also work well.

Paneer Corn Cups

Combine 0.25 cup of small paneer pieces with the corn filling. Paneer is an additional ingredient that provides some protein, making your dish very satisfying to eat and also serving as a light dinner for kids.

Expert Tips

  • Roll out the bread slices properly. An unflattened, thick slice of bread tears and cracks when you press it into the muffin tray.
  • Don't overfill the cups.  You shouldn't pile the filling above the edges of bread cups. It will spill during baking, creating a mess.
  • Always use a combination of processed cheese and mozzarella. You should use processed cheese in the filling to keep it moist. Sprinkle some mozzarella cheese on top for a golden, bubbly look.
  • Preheat the oven properly. If you put the cups into a cold or underheated oven, you'll get pale, soft results instead of golden, crispy cups.

Different Suggestions To Serve The Cheese Corn Cups

This dish is a snack on its own, but you can also pair it with some simple sides.

  • Serve it with some tomato ketchup or hot sauce as a dip. It’s the classic choice.
  • A glass of cold drink or chilled lemonade for a house party or kitty party.
  • A comforting, hot cup of masala chai for evening cravings.
  • A bowl of spicy mint chutney on the side for a fresh, tangy balance.

Storage and Reheating

Without baking. You can place the bread cups with filling in the muffin tray and store them in the fridge for up to a few hours before a party, without baking. Bake these cups fresh right before serving.

After baking: You should eat them immediately. If you store the baked cups in the fridge, they turn soft and lose their crispness.

To reheat: Reheat them in an air fryer at 180°C for 3-4 minutes, or in an oven at 180 °C for 5 minutes. Using a microwave isn't recommended because it makes the bread very soft and rubbery.

Frequently Asked Questions

Can I make this cheese corn cups recipe without using an oven?

Yes. You can use an air fryer at 180°C for 8-10 minutes instead. If you’re using a tawa, just press the shaped cups slightly into the pan, cover it, and cook them on the lowest heat setting for 10-12 minutes.

What type of bread works best for the cups?

Regular sandwich bread works well. Don't use very thick or very thin bread. Very thick bread won't shape easily in the tray, and very thin bread will tear when flattened and crisp too fast.

Can I use only mozzarella instead of processed cheese for the filling?

Yes. But your filling will be less cohesive. Mozzarella cheese releases more moisture as it melts, which can make your mixture slightly watery inside the cup. Processed cheese melts more evenly and helps hold the mixture together better.

Can I make the filling in advance and store it for the party later?

Yes. You can prepare it in advance, store it in an airtight container, and refrigerate the container. It will stay fresh for a day. Fill the bread cups, then bake them fresh before serving.

How can I make these corn cups less spicy for children?

Just skip the chili flakes and reduce the amount of aakhri masala. You can skip the aakhri masala as well. The mixture still gets the flavours from the oregano mix and cheese without adding the spice.

Can I make this cheese corn cups recipe without using a muffin tray?

Yes. You can use the aluminum cups, or flatten the slices of bread by hand into cups and place them on a baking tray. You won't get the perfect shapes you get with a muffin tray, but you’ll still get crispy and tasty cups.
