Step-by-Step Sweet Corn Soup Recipe
Step 1: Boil and blend the corn kernels
Take 1.5 cups of sweet corn kernels and boil them in 1 cup of water for 6-8 minutes. Cook them until the kernels turn soft.
If you are boiling corn in a pressure cooker, cook it for 2 whistles. Frozen corn only needs 5 minutes of cooking.
Take half of the boiled corn kernels, along with a little water, and blend them into a smooth paste.
Keep the other half of the kernels whole. This is an important trick all restaurants use. The blended corn adds thickness and sweetness to your soup, and the whole kernels add texture.
Step 2: Lightly cook the vegetables
Take 1 tbsp oil or butter in a deep pan and heat it. Once heated enough, add the chopped spring onion whites along with fresh, finely chopped garlic.
Cook them for 30 seconds over a medium heat. Make sure the garlic doesn’t turn brown, because burnt garlic adds a bitter taste to the entire soup.
Then add the finely chopped vegetables, such as carrots, beans, cabbage, and capsicum. Stir-fry them over high heat for only 2 minutes.
You need to keep the vegetables slightly crunchy for a fresh smell and texture.
Step 3: Add the boiled corn, corn paste, and water
Once the vegetables are cooked, add the blended corn paste and the whole corn kernels to the same pan. Give it a nice mix and pour in 3 cups of water or vegetable stock. Add salt to taste.
Bring it to a boil, then set the flame to the lowest setting and let it simmer for 4-5 minutes.
If you are using garlic and onion powder instead of fresh, add them at this stage so they get time to cook properly.
Step 4: Pour in the cornflour and water slurry
Take 2 tbsp cornflour in a small bowl and combine it with 4 tbsp of cold water. Stir the mixture until all the lumps break.
Pour the prepared cornflour slurry into the simmering soup gently, in a thin stream. Keep stirring the soup continuously with your other hand while adding the slurry.
The soup will thicken and turn glossy in about a minute. Let it cook for a couple of minutes more so the raw cornflour smell disappears.
If your soup feels very thick, add in 0.5 cup of hot water. If it feels very thin, add one tsp more cornflour slurry the same way.
Note: You should never add dry cornflour directly into hot soup. It will form hard lumps immediately, and you can’t fix it.
Step 5: Finish and garnish
Once you have the desired texture, turn off the gas. Then add the black pepper powder, vinegar or lemon juice, and the chopped fresh coriander leaves.
Adding black pepper at the end makes the soup sharp and fresh. If you add it early and cook it in the soup, it loses its smell and adds heat.
Taste it and adjust the spices or salt according to your preference. You can also add 0.5 tsp sugar if your corn isn’t sweet enough.
Transfer it to a soup bowl and serve hot with some crunchy snacks on the side.
Method Variations
Chicken Sweet Corn Soup
If you want a protein-rich soup, this variant is perfect for you.
Boil 100 grams of boneless chicken in salted water for 10-12 minutes. Once cooked through, take it out, let it cool, then shred it very finely with your fingers or a fork.
Save the chicken stock and use it instead of plain water in Step 3. This stock contains all the taste. Add the chicken and corn in Step 3 and follow the same recipe.
Restaurant-style thicker variant
If you and your family prefer thicker soup, increase the amount of cornflour to 3 tbsp and add 1 tbsp of butter at the end.
This is how most restaurants and cafes serve it.
Jain Variant
If you’re Jain or avoiding onion and garlic, skip them entirely. Instead, add a small pinch of hing powder to the hot oil in Step 2, then cook for 10 seconds.
Follow the rest of the recipe; it stays the same.
Vegan Variant
If you’re avoiding dairy, you can use any vegetable oil or plant-based butter instead of regular butter. There’s nothing else that needs to change. This soup doesn’t contain any milk or cream.
Expert Tips
- Blend half the corn kernels. If you make a soup only with whole kernels, it stays watery. If you make soup only with blended corn, it feels more like a paste. So always blend Half and keep half; it's the balance.
- Always add cornflour to cold water only. This one rule solves 90 percent of lumpy soup problems.
- Let the soup cook for 2 minutes after it thickens. Undercooked cornflour adds a chalky aftertaste.
- Add black pepper and vinegar after turning off the gas. Heat removes the aroma of both.
What to Serve With Sweet Corn Soup
Many families enjoy this soup on its own as a starter, without any sides, but you can pair it with a variety of accompaniments.
- You can enjoy this soup with a bowl of crispy fried noodles, crunchy snacks, or a few pieces of toasted garlic bread.
- Serve it with a small bowl of chopped green chilli in vinegar and some soy sauce for those who prefer a spicy, sharp soup.
- You can also serve this soup as a starter before hakka noodles, fried rice, or simple chilli paneer at house parties.
Tips for Storage and Reheating
- Refrigerate: You can store the leftover soup for up to 2 days. Make sure to transfer it to an airtight container.
- Reheat: Warm it over a medium flame with 2-3 tbsp of water. The added cornflour thickens more after cooling, so it will look almost solid when you take it out of the fridge, which is completely normal.
- Freezer: Freezing this soup isn’t recommended. The cornflour breaks down after defrosting, becoming very watery.
- You should finish the chicken variant the same day.
Frequently Asked Questions
What are the main ingredients in corn soup?
The primary ingredients this soup contains are sweet corn kernels, carrot, French beans, cabbage, capsicum, spring onion, garlic, black pepper powder, vinegar, and cornflour.
For the chicken variant, you can add boiled and shredded chicken.
Is sweet corn soup good for health?
Sweet corn soup is a light, filling option, as it contains sweet corn and vegetables and doesn’t use any dairy-based cream or milk.
It also uses only a small amount of oil. You can reduce the amount of cornflour for a lighter version, and use vegetable stock instead of normal water.
How can I thicken sweet corn soup?
You have to blend half the boiled corn into a paste and use a cornflour slurry. Make sure to add the slurry slowly to the simmering soup while stirring continuously, then cook for 2 more minutes.
Why did my soup turn lumpy?
Most of the time, it happens if you add dry cornflour, or mix it with warm water, or pour it all at once.
Always combine the cornflour with cold water before adding it, and pour this mixture in a thin stream while stirring the soup. If any lumps form in the soup, strain it with a tea strainer and reheat it.
Which corn is best for this recipe: fresh, frozen, or tinned?
You can use any of these, whichever is available. In comparison, American sweet corn tastes best. Frozen corn is a very convenient option and works almost the same. Tinned corn kernels are already cooked and salted, so don’t forget to drain them and rinse them before adding them to the recipe.
How do I make chicken sweet corn soup at home?
You have to boil and shred 100 grams of boneless chicken. Add the chicken stock instead of water, and add the shredded pieces along with the corn kernels.
Can I make this soup less spicy for children?
Yes. You can reduce the amount of black pepper powder to a quarter tsp and skip the vinegar entirely. Instead, add a tsp of butter at the end. Kids usually like the soup with extra corn kernels.
