What is Clove (Laung )?
Cloves are the dried flower buds of the Syzygium aromaticum tree, which is a plant that grows year after year in the Maluku Islands of Indonesia. Every bud is hand-harvested before it opens, then dried to a deep brown, hard colour.
There are two parts of the clove bud that matter in cooking. The first one is the round head on top, which contains the clove’s primary essential oil, eugenol. The second part is the stem that keeps the bud in place. When the clove has a fully developed head, it means it was harvested at the right stage and handled properly during drying and processing. A bud with a missing or broken head has lost some portion of its aromatic essential oil.
Raw clove has a sharp, intensely spiced aroma. In hot oil or ghee, it softens into a deep, warming sweetness that forms the backbone of the garam masala and biryani. It is one of the strongest spices in Indian cuisine.
