Most market-available chai masala is ground with traditional machines, so the smell evaporates. Hathi masala uses cryogenic grinding at –180°C to preserve the oils and aromas of each spice. This masala is also known as chai masala across many Indian families. It’s a blend of spices with a warm fragrance that Indian people add to their tea to enhance its flavour. This masala is made from many whole spices, such as cardamom, cinnamon, cloves, ginger, black pepper, and nutmeg, ground into a fine powder and mixed together.
