What is Biryani Masala?

It is a spice mix made specially for the biryani. This masala is completely different from regular garam masala. It contains extra spice powders, such as caraway (shahi jeera), mace (javitri), and black cardamom. These spices give your biryani a smoky, layered, balanced fragrance and better taste. This masala mix is ground using cryogenic technology and made the traditional way. It’s made using the same method Indian households have used to make biryani for ages.

- Veg Biryani: Add 1-1.5 tsp per 500g of rice. Mix the masala with the vegetable gravy before layering with rice.

- Chicken Biryani: Use 1.5 tsp for 500g of chicken. Add the masala to the curd marinade along with ginger, garlic paste, and onion.

- Mutton Biryani: Use 2 tsp for 500 grams of mutton. Mutton needs slightly more masala because it takes longer to cook.

- Hyderabadi Biryani: Sprinkle a pinch of this masala on the top of the rice right before sealing the pot or cooker. The steam generated inside the pot enhances the aroma of masala.

- Biryani Pulao: Add 0.5 teaspoon while sautéing onions. It gives a quick biryani taste in a simple pulao.
