How Indian Kitchens Use Our Everyday Masala
Every dish the Indian family loves begins with the right spice, and our everyday masala covers every cooking need. From a quick weekday dal to a slow-cooked Sunday biryani.
For everyday cooking, the three everyday masalas you will always need are Chilli Powder, Coriander-Cumin Powder, and Turmeric Powder. Together, these three form the flavour base of almost every Indian home-cooked meal.
A pinch of Dry Mango Powder gives instant tang without tamarind. Stir Garlic or Onion Powder into marinades, dips, and gravies for deep flavour without chopping.
And always finish your paneer butter masala or dal makhani with a crush of Kasuri Methi. That one step takes any dish from homemade to restaurant-quality.
About Hathi Masala Everyday Masala
Hathi Masala has been a reliable name in Indian households since 1952. Our everyday masala range is manufactured by Gandhi Spices Pvt. Ltd. in Rajkot, Gujarat. A facility that has spent over 70 years perfecting the science and craft of pure spice processing.
Why Does Our Grinding Process Make a Difference?
Most brands grind their spices using regular high-speed mills that generate significant heat. That heat evaporates the natural essential oils inside every spice. These are responsible for aroma and flavour.
We use advanced grinding technologies. Like cryogenic grinding, separate individual grinding lines for each spice, and vacuum grinding. The result is a powder that smells stronger, tastes better, and lasts longer in your dabba.
Quality you can trust
Every batch of our everyday masala goes through a rigorous quality process:
-
Raw spices are sourced from trusted regional farms across India.
-
Each batch of spices is tested for purity and safety.
-
Automated machine processing, no hand contact at any stage
-
ISO22000-certified manufacturing facility
-
Zero artificial colours or additives
Families in over 20 countries trust Hathi Masala for their daily spice needs.
How our Grinding Technologies Keep Every Spice Pure and Fresh
Each everyday masala in our range is processed using the grinding technology that best suits its natural composition. This ensures that every essential oil and aroma compound is preserved exactly as nature intended.
Cryogenic Grinding (–150°C)
Liquid nitrogen cools the grinding chamber to –150°C. The spice becomes very hard inside at this temperature. Which helps lock in its natural oils and aroma during grinding. This keeps 90–97% of the essential oils intact, while regular grinding keeps only 57–85%. The result is a stronger, fresher, and longer-lasting masala powder.
Used for: All variants of Chilli Powder, and Turmeric Powder
Separate Individual Grinding Lines
For our Coriander Cumin Powder, we never grind coriander and cumin seeds together. We grind each seed separately, so each spice keeps its natural oils. Once ground, we blend the powders in the right proportions. You get a perfectly balanced dhana-jeera powder every time.
Used for: Rajasthani Coriander Cumin Powder, Special Coriander Cumin Powder
Dehydration Process
Fresh spices are naturally dehydrated. This means we slowly dry our spices to remove moisture without losing their natural oils and flavor. No shortcuts, no harsh heat. We simply dehydrate our raw spices to produce a pure, fine powder ready for use in your kitchen.
Used for: Garlic Powder, Onion Powder, Saunf Powder, Dry Mango Powder
Flaking Method
These products are not ground at all. They are slowly dried at low temperatures and then broken into small flakes. This gentle process preserves the natural colour, shape, and aroma of the leaves.
Used for: Kasuri Methi, Mint Flake

These spices are used in every Indian dish.

What is the difference between Selam, Rajapuri, and Super Turmeric Powder?
Selam Turmeric comes from Salem, Tamil Nadu. It contains high curcumin with a bright yellow colour. Rajapuri Turmeric is from Gujarat and has a deeper golden colour and a strong, natural aroma. Super Turmeric has the highest curcumin, is the finest powder, and has the most vibrant colour.
What is the difference between Special and Rajasthani Coriander Cumin Powder?
Our Special Coriander Cumin Powder is a good choice for everyday meals. The Rajasthani variety has a stronger, bolder flavour. It is made for regional dishes like dal baati and undhiyu.
Does Hathi Masala add artificial colour to its everyday masala products?
No, artificial colours or additives are never used in any products. All colour comes from the spice itself. Every batch is lab-tested for purity before reaching customers.
Why does Hathi Masala claim to be a cryogenic spice brand?
Hathi Masala uses cryogenic grinding technology. A process in which spices are ground at very low temperatures. Unlike regular grinding, which can destroy natural essential oils, cryogenic grinding crystallises them. This results in fresher, more flavourful, and good quality masala powder in every pack.
