What Is Coriander Powder?
Coriander Powder is also known as Dhana Powder in Gujarati and Dhaniya Powder in Hindi. It’s ground from dried whole coriander seeds. The active compound present in coriander is linalool, which is responsible for it's flavour. A volatile citrus essential oil that gives the powder its mild, fresh, slightly sweet aroma. It’s one of the three spices, along with chili and turmeric, that form the flavor base of almost every Indian home-prepared meal. Coriander Powder adds depth without adding heat. It’s suitable for all ages and cooking styles.

Every batch of whole seeds goes through a 9-step automated cleaning process before grinding. Machine-cleaned for dust, stones, and impurities, with no hand contact at any stage. Seeds that don’t meet the required quality standards are rejected before processing begins.
Why Grinding Quality Matters for Coriander Seeds
Coriander seeds contain volatile citrus oils and the active compound linalool, which are sensitive to heat. When whole seeds are ground using traditional methods at high temperatures, these active compounds break down, essential oils evaporate, and the powder loses its natural fragrance before it even reaches you.
Hathi Masala uses the cold-grinding (cryogenic) method. Which grinds coriander seeds at controlled temperatures to preserve the natural oils. How to Use Coriander Powder
Dal Tadka: Add 1 teaspoon to pre-heated oil or ghee before adding the tomatoes, along with whole jeera seeds. Coriander's essential oils bloom in and give your dal or sabji a warm, earthy base flavour.
Sabji: Sprinkle 1 teaspoon into the onion-tomato masala during cooking, on medium heat. It works in every vegetable sabji from Aloo Gobi to Bhindi Masala.
Curry and Gravy: Use 1-1.5 teaspoons in any curry. Dhaniya Powder adds body and light sweetness, enhancing the flavor of any dish.
Chutney: Add 0.5 teaspoon of dhaniya powder to fresh green chutney or tomato chutney. The coriander oils add depth to the chutney without overpowering the fresh herb flavor.
Dry Rub and Marinade: Mix 1 teaspoon along with chilli powder, salt, and a little oil for a simple dry rub or marinade for paneer tikka or grilled vegetables.
